I’m on a couple of nights, tonight and Saturday and have spent the morning cooking.
I’m back on a healthy eating diet so have cooked some healthy meals to enjoy when I’m at work.
This morning it’s a katsu curried king prawns with udon noodles and stir fry.
Chicken and crispy potato salad with yogurt
And garlic prawn, avocado and chicken sushi.
Each one can be split into two meals and are just as nice cold as when heated.
Sweet stuff is a box of sliced mango
I love making sushi.
It’s mindful and careful and precise
I love the smell of the shaoxing Rice Wine which infuses each piece
The kitchen is filled with the scent of it
That's some lovely meal prep there. Tasty looking and interesting. You could have been Chef John in another life! x

ReplyDeleteOnce again, I am full of admiration for the passion you have for good food. Sometimes I find myself trying to channel my mother when I'm working away in the kitchen. (She shared your passion for a beautiful meal.) As it stands, if I wasn't relied upon to whip up presentable dinners, I'd just make myself toasted tomato and cheese sandwiches with a salad and be as happy as a clam.

ReplyDeleteIt all looks very nice. I have never made sushi... when I found out one itty bitty roll has about 80 calories it actually horrified me. I can think of many more yummy things to waste my calories on than cold rice.

Sushi...how do you get the damn rice to stick together in a reasonable way, but not be so sticky as to be a blob in your mouth? I've tried making sushi rice numerous times over the years, and never been satisfied. Recently I've been using pre-cooked packs of 'sticky rice', heating it in the microwave for a minute, then using rice wine vinegar, sugar, etc...it's ok, but not restaurant quality. Any tips?
The secret is to use sushi rice.
DeleteWash it carefully THREE times in cold water then leave soaking for ten minutes.
Then drain
For 500 g of rice use 660mls of cold water
Bring to a rolling simmer for 10 minutes then turn off heat and cover for a further ten
That all looks scrumptious.
